Grilled Balsamic Vegetables

Ingredients for Balsamic Marinade (also delicious as a salad dressing)

  • 3/4 cup extra virgin olive oil
  • 1/2 cup Balsamic Vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp rosemary
  • 1/2 tsp basil
  • ¼ tsp cayenne pepper
  • ¼ tsp salt
  • 1 Tbsp honey
  • 2 Tbsp Dijon mustard


  1. Blend all ingredients well in a blender or food processor.   Stir well before using.
  2. Marinade the vegetables of your choice (broccoli, zuchinni, red pepper, cauliflower, onion) in the marinade for 2-4 hours.
  3. Transfer to a grill basket.   Cook on medium heat approximately 5-10 minutes.  Remove vegetables when the skin begins to blister and the center is tender crisp.  Watch carefully to avoid excessive charring

Vegetable Grilling Tips

  • A grill basket can be purchased at hardware store or home improvement center for $10-$20 and is a must for grilling fish and smaller sized vegetables.
  • Vegetables can be grilled directly on the grill without a basket but must be cut in half or larger chunks.
  • Smaller vegetables can be placed on skewers in lieu of the grill basket.
  • In lieu of marinade, you can brush vegetables with olive oil during cooking.   Turn vegetables frequently and brush with additional oil or marinade to prevent drying.
